The fruit was harvested in late March 2025 and fermented on skins for two weeks in small open fermenters with regular hand plunging.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAfter gentle pressing, the wine underwent malolactic fermentation and maturation on full lees. Around 85% was matured in French oak, including 10% new puncheon, while 15% was matured in clay amphora to add further texture and complexity.
