A small parcel of fruit was left out   an extra 2 weeks to allow for the stems to fully ripen and lignify, in an effort to avoid any green notes in the finished wine. 1.2t of hand picked fruit was transferred to a CO2 saturated tank and sealed for 4 weeks of carbonic maceration. Basket pressed to tank to finish ferment and mature for 4 months prior to bottling. High toned estery notes from the carbonic fermentation, grape flavoured hubba bubba (in the best possible way), supple  purple fruits and strawberry fool framed by woodsy tannins.
