This Apsley Gorge Pinot has style, elegance and structure which begins with a refined, yet concentrated fruit combination of red cherries, blue berries and wild strawberries. The mid palate transitions in complete harmony with the fruit component with subtlety but complexity of dried thyme, violet flowers, fennel seeds and mildly spiced, toasted oak which then leads to a silky and finely textured tannin structure. This would match beautifully with a Rack of Spring Lamb or Fennel crusted Loin of Pork and as a vegetarian option, Truffle and Mushroom Parpadelle
