PJ Dredge Blanc de Noirs Brut Nature 2020 is a striking Tasmanian sparkling wine that captures both precision and texture in equal measure. Crafted in the traditional method from predominantly Pinot Noir with a small portion of Pinot Meunier sourced from a single vineyard in the Tamar Valley, the wine spent around five years on lees before being disgorged with no dosage, giving it a beautifully pure, bone-dry style. Fine bubbles carry layers of citrus zest, red apple, brioche and chalky mineral notes, while the palate is tense, saline and energetic, finishing long and remarkably clean. Despite its Brut Nature dryness, it remains generous and textural, making it an exceptional match for oysters, sashimi or celebratory occasions.
