AIX Provence Rose 2025
The AIX Provence Rosé 2025 is a beautifully elegant and refreshing French rosé, combining delicate summer fruits, subtle floral characters and a lovely silky texture with the freshness and finesse that have made Provence rosé so popular.
The palate opens with fresh white peach, wild strawberries and raspberries, complemented by bright citrus zest and delicate wildflower aromas. The mid-palate develops a lovely soft and rounded texture, revealing layers of juicy nectarine, watermelon and subtle red berry fruits. The finish is crisp, dry and refreshing, with lively citrus acidity, gentle mineral notes and a delicate saline character providing balance, elegance and impressive length.
A wonderfully versatile rosé, equally suited to relaxed summer afternoons, long lunches or simply enjoying a glass with friends.
Winemaking:
Produced by Maison Saint Aix in the Coteaux d'Aix-en-Provence appellation, AIX Rosé comes from an elevated vineyard estate where warm Mediterranean sunshine, limestone-rich soils and the cooling Mistral winds provide ideal conditions for growing premium rosé grapes.
The 2025 vintage is a blend of 60% Grenache, 20% Syrah and 20% Cinsault, with each variety contributing its own character. Grenache provides generous fruit and texture, Syrah adds structure and aromatic intensity, while Cinsault brings delicacy, freshness and finesse.
Harvesting commenced on 27 August 2025, with the grapes picked over 17 nights to ensure optimum ripeness while preserving freshness and natural acidity.
Each variety is vinified separately, with cold settling before fermentation to retain delicate fruit aromas and clarity. The resulting wine is carefully blended to achieve the characteristic pale pink colour, vibrant fruit expression and elegant balance of classic Provence rosé.
Food Pairing:
Grilled king prawns with lemon and garlic, burrata with heirloom tomatoes and fresh basil, seared tuna with a citrus dressing, Mediterranean vegetable tart, or a classic Niçoise salad. Also an excellent accompaniment to a relaxed summer picnic.
