The Riddling process in making Sparkling Wine
Making Sparkling wine is the most complex of all the different wine styles. Riddling is the process of moving the yeast lees that may have been sitting, still in a bottle for many months or even years, to the bottom neck of the bottle, so they can be frozen and removed to make a crystal clears wine.
