The proximity has led to this passion project of ageing a sparkling wine made from 100% Chardonnay, on lees underwater The tidal flows create movement in the bottle which releases the yeast lees, thus speeding up the ageing process and making for a full bodied Sparkling wine.
Only 377 bottles have been produced and every bottle is unique, no one bottle tastes the same as the other.
