Billecart-Salmon Le Reserve NV
Billecart-Salmon Le Réserve is an elegant and beautifully refined Champagne that combines delicate fruit, a creamy texture and impressive freshness with the finesse and balance that have become hallmarks of this renowned Champagne house.
The palate opens with crisp green apple, fresh pear and bright citrus fruits, complemented by delicate floral notes and a fine, persistent mousse. The mid-palate develops a lovely creamy texture, with subtle layers of toasted brioche, freshly baked biscuits and roasted nuts adding richness and complexity. The finish is long, clean and refreshing, with vibrant citrus acidity and a fine chalky minerality providing elegance, precision and exceptional balance.
Winemaking:
Established in 1818, Billecart-Salmon remains a family-owned Champagne house based in Mareuil-sur-Aÿ, renowned for its meticulous approach to winemaking and its elegant, refined house style.
Le Réserve is a blend of Pinot Meunier (43%), Chardonnay (29%) and Pinot Noir (28%), based on the 2020 harvest. More than 50% reserve wines contribute depth, complexity and consistency to the final blend.
Vinification takes place predominantly in temperature-controlled stainless steel tanks, helping preserve the delicate fruit and freshness. The wine spends an average of 50 months ageing on lees, developing its fine mousse, creamy texture and subtle toasted characters.
Finished with an Extra Brut dosage, Le Réserve is a beautifully balanced Champagne that combines freshness, finesse and remarkable versatility.
Food Pairing:
Freshly shucked oysters, seared scallops with lemon butter, crab salad with citrus dressing, roast chicken with fresh herbs, or soft creamy cheeses such as Brie and Camembert.
