Bellebonne Vintage Sparkling 2021

From one of Tasmania's great sparkling wine specialists, Natalie Fryar, Bellebonne Vintage Cuvée 2021 combines 60% Chardonnay with 40% Pinot Noir from a single vineyard in Pipers River.

Strawberry, citrus and ripe nectarine lead into a generous mid-palate of toasted hazelnut, brioche, fresh cream and subtle ginger spice. Three years ageing on lees builds texture and complexity, while barrel fermentation adds richness without losing the freshness and precision of the Tasmanian fruit.

The finish is long, elegant and finely structured, with persistent citrus freshness, delicate pastry notes and a fine, lively bead. A beautifully composed Tasmanian sparkling that balances richness with freshness and finesse.

Food Match: Fresh oysters, smoked salmon, scallops or charcuterie. Also excellent with richer seafood dishes where its freshness can balance creamy or buttery flavours.
