Dr Edge Tasmania Riesling 2025

The entry on the Dr Edge Riesling 2025 is zesty and fresh, with citrus fruits, Jazz apple and a hint of rockmelon. The mid-palate builds beautifully in texture, with white flowers, almonds and cream complemented by layers of slate, minerality and spice.

The finish is every bit as distinctive as the rest of the wine, driven by racy, steely acidity with a subtle element of apricot skin adding another layer of flavour and texture. Super delicious, energetic and wonderfully complex.

Winemaking
100% hand-picked and hand-sorted, with whole clusters direct pressed to a combination of old oak puncheons, clay amphora and stainless steel. Wild fermented and matured for six months on lees.

Food Match
Excellent with scallops served with a citrus and ginger sauce, pumpkin soup or baked Brie. Its bright acidity and textural palate would also work beautifully with fresh seafood, lightly spiced Asian dishes and creamy cheeses.
