Pipers River, Tasmania

A beautifully mature and sophisticated Tasmanian sparkling wine that showcases the remarkable complexity and refinement achieved through extended ageing on yeast lees. The palate opens with crisp green apple, white peach, ripe pear and preserved lemon, complemented by delicate notes of honeysuckle and citrus blossom. The mid-palate is rich, creamy and beautifully layered, revealing toasted brioche, freshly baked pastries, roasted hazelnuts, lemon curd and subtle hints of honey and savoury mushroom. A fine, persistent bead and vibrant natural acidity bring freshness and precision, leading to a wonderfully long, elegant and savoury finish with lingering notes of oyster shell, toasted nuts and saline minerality.

Winemaking:

Crafted from 54% Chardonnay and 46% Pinot Noir grown in Tasmania's cool-climate Pipers River region. Selected parcels undergo partial fermentation in seasoned French oak barrels for ten months, adding richness, texture and complexity. Following secondary fermentation in bottle, the wine spends an extraordinary seven years ageing on yeast lees before disgorgement, approximately four years longer than the original Vintage Cuvée release. This extended maturation develops remarkable depth and complexity, while retaining the freshness, elegance and finesse that define premium Tasmanian sparkling wine.

Food Match:

Freshly shucked oysters with finger lime dressing, porcini mushroom arancini, seared scallops with lemon butter, roast chicken with wild mushrooms, and aged Comté or Gruyère cheese.

Region: Pipers River, Tasmania
