Bellebonne BIS Sparkling Rose NV

Bellebonne BIS Sparkling Rosé NV is an elegant Tasmanian sparkling with a lovely combination of fragrant red fruit, creamy texture and fine savoury complexity.

Wild strawberry leads the way, joined by rose petal, Turkish delight and delicate red fruits. The palate is refined and beautifully textured, with fresh cream and brioche adding richness while bright acidity and mineral freshness keep the wine lively and precise.

Elegant, persistent and full of character, this is a serious Tasmanian sparkling Rosé that works just as well as an aperitif as it does alongside food.

Winemaking

Pinot Noir leads the blend, with fruit sourced from cool-climate Tasmanian vineyards including Pipers River and the Tamar Valley. Reserve wines from multiple vintages are incorporated to add depth and consistency.

The wine undergoes full malolactic fermentation and around four months on full lees before tirage, followed by secondary fermentation in bottle and extended bottle ageing of up to two years before disgorgement.

Food Match

Excellent with freshly shucked oysters, smoked salmon, prawn or lobster canapés and soft cheeses. It would also work beautifully with duck, charcuterie or a simple strawberry-based dessert.
